Easy Protein Pancakes

We all love pancakes, especially if they’re good for you!! I’ve discovered a recipe for some awesome protein pancakes which is only 6 ingredients!

YOU WILL NEED

  • 2 egg whites
  • 1 cup of water or milk – almond milk works too
  • 1&1/2 tsp coconut oil
  • 2/3 cup of ground oats
  • 2 scoops of protein powder of choice – cookie dough is my favourite
  • a pinch of salt – I always use pink salt instead of white salt

MAKE SOME MAGIC

  • Throw all of thesingredients in a blender and blend until smooth
  • Heat up a non stick pan and coat with oil spray – it must be a spray to decrease your use of oil
  • Pour a small amount of the pancake mix into the pan until you have a thin, flat liquid blob
  • Gently peel back the edges with a flat wooden spatula and flip the pancake over when it moves freely
  • Do the same again until the pancake moves freely in the pan – it should only take about 30 seconds
  • BOOM! You have a pancake! Place it gently on a warm plate and repeat this process until your mixture is gone!!

 

TIP #1 – This mixture makes about 20 pancakes which is A LOT, half the ingredients for a smaller serving size.

TIP #2 – I like my pancakes covered in peanut butter, banana and chocolate sauce! You can add as much or as little as you like to these babies: nuts, berries, butter….get creative!
